You can add both by manually adding them to the page header and to the body text of your page or post. For most people there is a better option, install a plugin that does this for you. Probably the easiest setup to use is the plugin combination of AMP and Yoast SEO. This combination has drawbacks. For the more advanced user the combination of AMP for WP and Schema and Structured Data for WP are a better option.

Yes, chiefly that, if you use these 2 plugins to build the data the combination will not insert the structured data you input into the page content.
